How to use

Base formula

Wheat flour60%600 g
Water60%600 g
Pizza base premix40%400 g
Levapan fresh yeast2-3%20 – 30 g


Mode of preparation

  1. Knead all the ingredients until you get an extendable dough.
  2. Leave to stand for 20 min.
  3. Divide and weigh pieces of approximately 150g.
  4. Bolar and leave to rest for 20 more min.
  5. Stretch the dough in a circular shape
  6. Leavening in chamber at a temperature of 35°C for 15 min
  7. Before baking, prick the dough.
  8. Add tomato paste and ingredients to taste.
  9. Bake at a temperature of 230°C for 8 to 12 minutes
